    Ingredients:

    • ½ cup white vinegar or rice vinegar
    • ½ cup water
    • ½ cup brown sugar
    • 2 tablespoons chili paste or sambal oelek (or finely minced long red chillies)
    • 2 teaspoons chili flakes
    • ½ teaspoon cayenne pepper (optional)
    • 1 tablespoon fish sauce or soy sauce
    • 2 cloves garlic, finely minced
    • 1 tablespoon cornstarch + 2 tablespoons water (for slurry)
    • Optional: roasted red bell pepper or a couple fresh red chilies (for a beautiful deep red color)

    Instructions:

    1. In a saucepan over low heat, combine vinegar, water, and brown sugar. Stir until sugar dissolves.
